A delicious dish featuring a fennel-infused sausage and fig chutney. The spicy sausage slices are paired with sweet and tangy fig sauce, served on whole-grain bread for a satisfying snack.
Ingredients
- 1 Bratwurst
- Fenchel seeds
- orange zest
- 2 tbsp oil
- 100 g sugar
- 4 figs
- 2 tbsp chopped shallots
- 500 ml red grape juice
- 100 g walnuts (chopped and roasted)
- 4 slices whole-grain bread

Remove the skin from the bratwursts and slice them into about 1 cm thick pieces. Brown the sausage slices with the spices in oil.

Caramelize the sugar for the chutney, then add the finely chopped figs and shallots. Deglaze with grape juice and let the liquid reduce slightly before folding in the roasted walnuts.

Arrange the bratwurst slices on the whole-grain bread, place a small dollop of chutney on each slice, and decorate with edible flowers or herbs.
