Ingredients
- 500 g dorade fillet (ready to cook, skinless)
- 1 Garlic clove
- 3 tbsp Lemon juice
- 2 Tomatoes
- 1 Red Onion
- 2 tbsp olive oil
- Salt
- Pepper (freshly ground)
- parsley (for garnish)

Wash the fish, pat dry and cut into bite‑size pieces. Peel the garlic, finely chop and mix with the fish and lemon juice. Let rest for about 30 minutes.

Meanwhile, blanch the tomatoes, cool, peel, quarter, seed and dice them. Peel the onion, quarter it; cut one quarter into thin strips and the remaining quarter into small cubes. Mix the tomatoes with the onion cubes and olive oil, combine with the fish, season with salt and pepper, and serve garnished with onion strips and parsley.
