Ingredients

  • 1200 g small chicken breast fillets (10 small chicken breast fillets)
  • 20 small chicken wings
  • 75 ml olive oil
  • juice of one lemon
  • Salt
  • freshly ground pepper
  • 3 Garlic cloves
  • 2 red peppers
  • 1 bundle sage
  • 6 lemon slices (unprocessed)

Instructions

    For the marination whisk together olive oil, lemon juice, pepper and 1 tsp salt. Peel the garlic and squeeze it into the mixture. Deseed the peppers, wash them and cut into thin rings. Wash the sage and shake dry. Pick off the leaves and cut one third into thin strips. Set aside the remaining sage leaves. Stir the pepper rings and sage strips into the marination.

    Mix the chicken breast fillets and wings with the marination and let sit for about 10 minutes. Remove and arrange on a deep baking tray with the lemon slices. Bake in a preheated oven at 200 °C (middle rack) for about 30 minutes. Brush the chicken pieces with more marination several times. If desired, finish by broiling them briefly. Garnish with sage leaves and lemon slices and serve on a platter.
