Penne with Vegetables

Ingredients
- 1 red bell pepper
- 2 carrots
- 4 Spring Onions
- 1 bunch parsley
- 400 g Whole wheat penne
- Salt
- 4 tbsp olive oil
- 0.5 lime (juice)
- 100 ml Vegetable broth
- 150 g crème fraîche
- Pepper (freshly ground)
Instructions

Wash the bell pepper, halve it, remove seeds and white membranes, and dice finely. Peel the carrots and julienne them into thin strips. Trim and wash the spring onions, then slice them diagonally into fine rings. Wash the parsley, pluck leaves from stems, and roughly chop.

Cook the penne in plenty of salted water according to package instructions until al dente.

Heat olive oil in a pan and sauté the bell pepper with the spring onions. Deglaze with lime juice, add carrots and vegetable broth. Drain the penne and add it to the pan with vegetables. Stir, fold in crème fraîche and parsley, then season with salt and pepper.
