Ingredients

  • 200 g penne
  • 2 Tomatoes
  • 2 tbsp olive oil
  • 1 Shallot
  • 1 tbsp Tomato Paste
  • 2 tbsp red wine
  • 0.5 bunch arugula
  • 1 tsp sugar
  • 1 tsp Oregano
  • 50 g Parmesan
  • Salt
  • Pepper

Instructions

    Cook the penne in salted water until al dente. Wash and dice the tomatoes.

    Peel and finely chop the shallot. Sauté it in hot olive oil, then add sugar and tomato paste. Add red wine and tomatoes, letting the mixture simmer. Stir in oregano, then combine with the pasta and a splash of pasta cooking water. Season with salt and pepper.

    Wash the arugula, remove tough stems, and roughly chop. Fold into the penne and serve in bowls, sprinkled with freshly grated Parmesan.
