Pasta with Asparagus

Ingredients

  • 300 g green asparagus (the lower third peeled, ends trimmed and cut into small pieces)
  • 6 tbsp Olive oil
  • 2 tbsp lemon juice
  • 2 tbsp pine nuts
  • Salt
  • Pepper (freshly ground)
  • 200 g penne

Instructions

    Cook the asparagus in boiling salted water for about 8 minutes, then drain.

    Boil the pasta according to package instructions until al dente, drain, rinse with cold water and set aside.

    Toast the pine nuts in a dry pan over medium heat, then set aside.

    Heat the oil in a pan, quickly sauté the asparagus, season well with salt, pepper and lemon juice, then stir in the penne and warm through. Sprinkle with toasted pine nuts before serving on plates.
