Ingredients
- 1 onion
- 2 tbsp olive oil
- 850 ml peeled tomatoes (1 can)
- thyme
- Basil
- 250 g honeydew melon (flesh)
- 1 tbsp red wine vinegar
- Salt
- Pepper
- 500 g penne
Instructions

Peel and dice the onion. Heat olive oil in a pan. Sauté the onion until translucent. Add the tomatoes with their liquid, crush them, and simmer for about 5 minutes while stirring occasionally.

Rinse the herbs (reserve some for garnish), pat dry, and finely chop the leaves. Cut the melon into cubes. Add the herbs, melon, and vinegar to the tomato mixture and heat through. Season with salt and pepper.

Cook the penne in plenty of salted water according to package instructions until al dente. Drain and serve with the sauce, garnished with fresh herbs.
