Penne Pomodoro

Ingredients
- 100 g onions
- 2 cloves garlic
- 150 g Carrots
- 150 g celery sticks
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 800 g peeled Tomatoes (canned)
- 200 ml vegetable broth
- Salt
- pepper from grinder
- 1 handful basil
- sugar
- 400 g penne (fresh cooked)
Instructions

Peel and finely dice the onions and garlic. Peel and cut the carrots, wash and cut the celery sticks into small cubes.

Heat the olive oil in a pot. Sauté the onion, garlic, and vegetable cubes over medium heat for 2 to 3 minutes. Stir in the tomato paste and toast briefly.

Break up the peeled tomatoes slightly, adding their liquid along with the broth to the vegetables. Season with salt and pepper. Cover and simmer on low heat for 25 to 30 minutes.

Finely chop the basil and stir it in. Taste the sauce, adjusting with sugar, salt, and pepper; optionally purée with an immersion blender. Mix in the freshly cooked penne. Serve with a green salad dressed with vinaigrette.
