Pear Chestnut Soup

Ingredients

  • 4 small pears
  • 250 ml dry white wine
  • 500 g roasted, peeled chestnuts (sweet chestnuts)
  • 1 finely chopped shallot
  • 1 l vegetable broth
  • Salt
  • Pepper
  • 100 g Sour cream
  • 100 ml heavy cream (at least 30% fat content)
  • 2 tbsp gooseberry jam

Instructions

    Peel the pears, leave the stem attached but cut out the core from the bottom. Place the pears side by side in a small pot, pour over the wine and cook until soft. Remove from the wine and cut off the lower quarter of each pear.

    Add the chestnuts together with the shallots, the colorful pear pieces, broth, and wine residue to a pot and bring to a boil. Simmer for about 1 hour while stirring constantly.

    Stir in the sour cream, heavy cream, and jam. Blend everything finely and season with salt and pepper. Strain through a sieve if desired.

    Serve on plates, cut the upper halves of the pears and place them into the soup. Serve immediately.
