Pear Cheese Tart

- 200 g Flour
- 1 pinch salt
- 100 g cold butter
- 1 egg
- 1 lemon
- 20 ml pear brandy
- 4 pears
- 500 g cheese (Livarot)
- 1 tsp Caraway seeds

Sift the flour onto a work surface, mix in the salt and press a well into the center. Cut the cold butter into small pieces, distribute around the well, pour the egg into the center and use a knife to cut through all ingredients until small dough crumbs form. Quickly knead with hands into a dough, adding cold water or more flour if needed. Shape into a ball, wrap in cling film and chill for about 30 minutes.

Squeeze the lemon juice and mix it with the brandy in a bowl. Peel the pears, halve them, remove the core and cut the halves into wedges. Toss the pear wedges in the lemon‑brandy mixture.

Preheat the oven to 180 °C fan‑forced. Line a tart tin with parchment paper.

Roll out the dough slightly larger than the tin and line it. Arrange the pear wedges on top. Drain the cheese, slice it and lay the slices over the pears. Sprinkle with caraway seeds and bake in the oven for about 45 minutes until golden brown. Remove from the oven and serve warm.
