Ingredients
- 600 g waxy potatoes
- 400 g pears
- 400 ml whipping cream
- 1 Garlic clove
- 2 tbsp crème fraîche
- Salt
- Pepper (freshly ground)
- 2 tbsp fresh chopped herbs (parsley, dill and thyme)
- 100 g grated cheese (e.g. Gruyère, Emmental)
- kitchen herbs (parsley, dill and thyme) for garnish
Instructions
-
1.
Peel the garlic clove. Rub the baking dish with the garlic.
-
2.
Wash, peel, and thinly slice or shave the potatoes. Cut the pears into wedges. Layer them evenly in the baking dish. Mix cream, herbs and crème fraîche; season with salt and pepper and pour over the potatoes so that everything is covered about two‑thirds of the way, adding more or less cream as desired. Sprinkle cheese on top and bake in a preheated oven at 180 °C (356 °F) under/over heat for about 40–50 minutes until golden brown. Test with a fork: if it easily pierces through and pulls out, the gratin is done. Serve garnished with herbs.
