Peanut Diamonds with White Chocolate

Quick dessert: Peanut diamonds with white chocolate are perfect for gifting, bringing along, and snacking.

Ingredients

  • 125 g butter
  • 125 g rolled oats
  • 1 egg
  • 150 g brown sugar
  • a pinch of salt
  • 1 tsp ground cinnamon
  • 1 tsp ground cardamom
  • 1 tbsp Peanut butter
  • 4 tbsp flour
  • 100 g chopped unsalted peanuts
  • 3 tbsp honey
  • 150 g white couverture chocolate
  • sugar

Instructions

    Roast the rolled oats briefly in hot butter in a pan. Remove from heat and let cool.

    Preheat the oven to 180°C (fan). Line a baking tin (about 20x20 cm) with parchment paper.

    Whisk the egg with sugar, salt, cinnamon, and cardamom until frothy. Gradually fold in peanut butter, flour, oats, and peanuts. Pour the batter into the tin, smooth the top, and bake for about 15 minutes until golden brown.

    Remove from oven, take out of the tin, and brush with honey. While still warm, cut into diamond shapes and let cool.

    Melt chopped white chocolate for decoration. Dip the tops of the diamonds in the melted chocolate and allow to set. Optionally decorate with chocolate lines and dust with a little sugar.
