Chocolate Mulled Wine Cake

Ingredients
- 100 g dark chocolate (70% cocoa)
- 200 g butter
- 125 g honey
- 4 eggs
- 200 g spelt whole‑grain flour
- 100 g spelt flour type 630
- 100 g Ground Almonds
- 40 g cocoa powder
- 1 packet baking powder
- 1 pinch salt
- 120 ml mulled wine
- Erythrit powder for dusting

Coarsely chop the chocolate and melt it over a double boiler. Remove from heat and let cool.

Beat the butter until creamy, gradually adding the honey. Add the eggs one at a time, mixing well. In another bowl combine both flours, almonds, cocoa, baking powder, and salt; alternately fold this dry mixture into the butter‑egg batter with the mulled wine. Fold in the melted chocolate.

Line a loaf pan with parchment paper. Pour in the dough, smooth the top, and bake in a preheated oven at 180 °C (fan 160 °C) for 50–60 minutes, checking with a skewer.

Remove the cake from the oven, let it cool, carefully lift it out of the pan, and dust with erythrit powder as desired.
