Ingredients

  • 140 g soft butter
  • 200 g cane sugar
  • 50 g powdered sugar
  • 2 Eggs
  • 350 g spelt flour
  • 1 tsp Baking powder
  • 0.5 tsp Salt
  • 1 tsp ground cinnamon
  • 100 g chopped peanuts
  • 200 g chocolate chips

Instructions

    Beat butter, cane sugar and powdered sugar until creamy, then gradually fold in the eggs. Mix spelt flour, baking powder, salt and cinnamon together and stir into the egg-butter mixture. Roast the peanuts in a dry pan over medium heat until golden brown, remove from heat and let cool. Gently fold the roasted peanuts and chocolate chips into the dough.

    Drop spoonfuls of dough onto a parchment-lined baking sheet, spacing them apart.

    Bake the peanut chocolate cookies in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for about 12–15 minutes. Remove and cool on a wire rack.
