Ingredients

  • 300 g flour
  • 1 pinch salt
  • 180 g brown sugar
  • 225 g butter
  • 80 g white couverture chocolate
  • 80 g milk couverture chocolate
  • 80 g dark bitter couverture chocolate
  • 3 tsp butter

Instructions

    Mix the flour with salt and brown sugar. Beat in the butter and quickly knead everything into a smooth dough. Wrap the dough in plastic wrap and refrigerate for 60 minutes.

    Preheat the oven to 170 °C (convection). Line a baking sheet with parchment paper.

    Roll out the dough on a floured surface to about 0.4 cm thickness and cut out heart shapes with a cookie cutter. Place the hearts on the sheet and bake for 15–20 minutes until golden yellow. Cool the cookies immediately on a wire rack.

    Melt each type of couverture chocolate in a double boiler with a teaspoon of butter. Dip one-third of the hearts into each chocolate, let excess drip off, and allow them to set at room temperature. Pack the cookies in well-sealing jars.
