Peach Salad

Summer on a plate: Our peach and tofu salad is fruity, light, and packed with plant power.

Ingredients

  • 100 g peeled almond kernels
  • 4 ripe peaches
  • 1 small tart apple
  • 80 g mixed green salad (2 handfuls)
  • 300 g Tofu
  • 4 tbsp Walnut oil
  • 3 tbsp balsamic vinegar
  • Salt
  • Pepper

Instructions

    Roast almonds in a dry pan over low heat until fragrant. Remove and set aside.

    Wash peaches, halve, pit, and cut into wedges. Peel the apple, halve, core, and dice into small pieces.

    Wash the salad leaves and spin dry. Slice the tofu into rounds.

  4. 4.

    Arrange the salad, peach wedges, apple cubes, and almonds on a plate; top with tofu slices.

    Whisk together oil, vinegar, 2–3 tbsp water, salt, and pepper to make a vinaigrette. Drizzle over the peach salad.
