Peach Melba

Ingredients

  • 4 peaches
  • 150 g sugar
  • 1 Vanilla bean
  • 1 lemon
  • 400 g raspberries
  • 1 tbsp raspberry liqueur
  • 4 scoops vanilla ice cream

Instructions

    Parboil the peaches, shock them in cold water, peel, halve and remove pits.

  2. 2.

    Bring 0.5 l water and sugar to a boil.

  3. 3.

    Split the vanilla bean lengthwise, scrape out the seeds. Add the bean, seeds and lemon juice to the sugar solution and reduce until syrupy.

    Poach the peach halves in the vanilla syrup for 3–4 min, then remove and let cool.

  5. 5.

    Blend the raspberries (save some for garnish) with 3 tbsp of syrup, strain through a fine sieve and season with raspberry liqueur.

    Arrange the peach halves on plates, add scoops of vanilla ice cream, spoon raspberry sauce over them and garnish with remaining berries.
