Pea Soup with Salmon

Ingredients
- 1 kg fresh peas
- 1 onion
- 1 bunch lemon balm
- 2 tbsp margarine (or butter)
- 750 ml instant vegetable broth
- 1 cup crème double
- Salt
- Pepper
- 50 g smoked salmon
Instructions

Peel the peas. Peel and dice the onion. Pull the lemon balm leaves from the stems.

Heat the butter. Sauté the peas, onion, and lemon balm stems in it. Add the broth and simmer on low heat for about 15 minutes.

Take a ladleful of peas from the pot and set aside. Puree the rest with the hand mixer’s slicing stick.

Stir in the crème double, add the peas and lemon balm leaves, mix well, and season with salt and pepper. Slice the salmon into strips, place them on top of the soup, and serve immediately.
