Pea Soup with Feta and Dill

Ingredients

  • 1 Shallot
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 300 g peas (frozen)
  • 200 ml vegetable broth
  • 4 sprigs of dill
  • 100 g feta cheese
  • 100 g heavy cream
  • Salt
  • Pepper
  • chili flakes
  • 1 tsp black sesame seeds

Instructions

    Peel the shallot and garlic. Heat 1 tbsp of oil in a pot, sauté the shallots and garlic darin for 3 minutes over medium heat. Then add the peas and simmer for another 3 minutes.

    Then pour in the vegetable broth and let it simmer for about 5 minutes. Meanwhile, wash, dry, and finely chop the dill. Crumble the feta.

    Then pour in the cream and puree the soup with half of the dill using an immersion blender. Season the pea soup with salt, pepper, and chili flakes. Fill into two bowls, sprinkle with the remaining dill, feta, and sesame seeds, and drizzle with the remaining oil.
