Ingredients
- 200 g whole wheat spaghetti
- Salt
- 10 g ginger
- 1 clove garlic
- 2 scallions
- 400 g bok choy
- 150 g cherry tomatoes
- 1 handful parsley
- 150 g shrimp (peeled, deveined, ready to cook)
- 1 tbsp Coconut oil
- 1 tbsp lime juice
- Pepper
- chili flakes
- 1 tsp sesame seeds

Cook spaghetti in boiling salted water for about 8–10 minutes until al dente. Drain and set aside.

Meanwhile, peel and chop the ginger and garlic. Clean, wash, and slice the scallions into rings. Clean, wash, and slice the bok choy into strips. Wash and halve the tomatoes.

Heat oil in a pan, sauté ginger, garlic, and scallions over medium heat for 4 minutes. Add shrimp, bok choy, and tomatoes and sauté for 5 minutes, deglaze with lime juice. Season with salt, pepper, and chili flakes.

Arrange noodles on plates, place shrimp with bok choy on top, and sprinkle with parsley, sesame seeds, and chili flakes.
