Pea Soup with Coriander

Try the pea soup with coriander from Spoonsparrow, a tasty recipe with a special twist.

Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 1 tbsp Rapeseed Oil
  • 400 g peas (fresh or frozen)
  • 1 tsp freshly grated ginger
  • 600 ml vegetable broth (or poultry broth)
  • 2 handfuls coriander leaves
  • 100 g crème fraîche
  • Salt
  • 1 tsp lemon juice
  • black pepper (ground fresh)
  • chopped chives for garnish

Instructions

    Peel and finely dice the shallot and garlic. Sauté together in hot oil, then add the peas and ginger. Deglaze with broth and bring to a boil. Simmer for about 10 minutes. Rinse the coriander leaves, shake dry, and roughly chop. Add crème fraîche (leaving 1 tbsp) to the soup and blend until smooth; optionally strain through a sieve. Reheat gently without boiling, adding more broth if needed. Season with salt, lemon juice, and pepper.

    Fill heat‑proof glasses as desired and garnish with remaining crème fraîche. Sprinkle with chives before serving.
