Classic Tomato Soup

Ingredients

  • 2 onions
  • 2 Garlic cloves
  • 1 red chili pepper
  • 500 g tomatoes or 500 g diced canned tomatoes
  • 3 tbsp olive oil
  • 200 g passata (200 g)
  • 600 ml Vegetable Broth
  • 2 tbsp freshly chopped basil
  • 1 tbsp freshly chopped parsley
  • 3 tbsp balsamic vinegar
  • Salt
  • 0.5 tsp Sugar
  • Tabasco
  • 4 tbsp crème fraîche
  • chives rolls
  • olive oil
  • roasted white bread

Instructions

    Peel and roughly chop the onions and garlic. Wash the chili pepper, cut it lengthwise, remove seeds and white membrane, then dice finely. Wash the tomatoes, quarter them, remove seeds and roughly chop. Heat olive oil in a large pot, sauté onions, chili, and garlic while stirring.

    Add passata and chopped tomatoes, pour in vegetable broth. Stir in basil, parsley, and balsamic vinegar. Season with salt, sugar, and 1-2 dashes of Tabasco. Simmer the soup over medium heat for 20-25 minutes, stirring occasionally.

    Blend the soup, strain through a sieve, bring to a boil, stir in crème fraîche, and adjust seasoning.

    Serve by ladling the soup onto plates, sprinkle with chives rolls, and drizzle with a little oil.

    Optionally serve with roasted white bread.
