Pastry Tart with Fish and Seafood

Ingredients
- 500 g pre-cooked fish fillet (e.g., cod)
- 200 g pre-cooked shrimp
- 2 tbsp lemon juice
- Salt
- pepper (ground)
- 300 g puff pastry (frozen)
- 3 tbsp butter
- 2 tbsp flour
- 250 ml Whipping Cream
- 100 g crème fraîche
- 2 tbsp freshly chopped parsley
- butter (for the pan)
Instructions

Dice the fish fillets, mix with the shrimp, season with salt and pepper, and drizzle with lemon juice.

Let the puff pastry thaw on a kitchen towel, roll it out and cut to fit the pan plus a lid. Butter the tart pan and line it with the pastry (with edge).

Preheat the oven to 200°C fan or conventional heat.

Melt 2 tbsp butter in a saucepan, stir in flour, whisk in cream, season with salt and pepper, then fold in crème fraîche. Add the fish-shrimp mixture to the sauce, pour over the pastry, and place the pastry lid on top. Press the edges together, optionally imprint patterns with a fork, and seal firmly. Brush with remaining butter and bake for about 40 minutes until golden brown.

Before serving, remove from the pan in four portions and sprinkle with parsley.
