Ingredients

  • 2 carrots
  • 1 Zucchini
  • 1 untreated lemon
  • 500 g farfalle
  • Salt
  • 1 Avocado
  • 150 g Sour cream
  • pepper (crushed)
  • 2 tbsp olive oil

Instructions

    Peel the carrots. Wash, trim, and slice the zucchini, just as you would the carrot. Rinse the lemon hot and zest its peel. Squeeze out the juice.

    Cook the pasta in salted water until al dente.

    Peel the avocado, halve it, remove the pit, and blend the flesh with the lemon juice, sour cream, and a splash of pasta cooking water. Season with salt and pepper.

    Sauté the vegetable strips along with the lemon zest in hot oil for 1–2 minutes. Season with salt and pepper and toss in the drained pasta.

    Serve the pasta topped with the sauce.
