Pasta with Vegetables

Ingredients
- 1 Zucchini
- 1 Carrot
- 1 parsley root
- 1 stalk leek
- 2 tbsp white wine vinegar
- 400 g linguine
- Salt
- Pepper (freshly ground)
- 150 g grated Emmental cheese
- 6 tbsp passata tomato sauce
- 0.5 tsp paprika powder
- 2 tbsp butter

Wash and trim the zucchini, then shave it lengthwise into thin slices and cut crosswise into strips. Wash, peel, and shave the carrot and parsley root lengthwise into thin slices, then cut into strips. Cut the leek in half lengthwise and wash; slice the halves into thin strips.

Bring 1 liter of water with salt and vinegar to a boil in a pot. Add the pasta, zucchini, carrots, parsley root, and leek strips and cook for about 6-8 minutes until al dente. Drain the vegetable pasta in a colander, season with salt and pepper, and taste. Mix the tomato sauce, paprika powder, and butter with the vegetable pasta, divide onto plates, sprinkle with cheese, and serve immediately.
