Natural Schnitzel with Zucchini-Mushroom Vegetable

- 4 thin pork schnitzels
- 2 tbsp clarified butter
- Salt
- Pepper (freshly ground)
- 2 zucchinis
- 200 g oyster mushrooms
- 4 shallots
- 2 tbsp olive oil
- 200 g whipping cream
- 0.5 bunch rosemary

Wash the zucchini, trim ends, slice into thin rounds. Clean the mushrooms and split them lengthwise. Peel and quarter the shallots. Heat olive oil in a pan, sauté zucchini slices and shallots until lightly browned, then add oyster mushrooms.

Rinse the meat, pat dry, season with salt and pepper, and sear each side in hot clarified butter for 3 minutes. Set aside warm. Deglaze the pan with cream to make a sauce. Finely chop one rosemary sprig, remove remaining needles. Add chopped rosemary to the sauce, season with salt and pepper. Serve schnitzels with vegetables, drizzle sauce over them, and garnish with rosemary leaves.
