Ingredients

  • 2 red bell peppers
  • 250 g Cherry Tomatoes
  • 4 fresh garlic cloves
  • 2 onions
  • 2 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • 1 tsp powdered sugar
  • 500 g penne
  • a handful herbs (parsley and shiso)
  • 2 tbsp balsamic vinegar

Instructions

    Preheat the oven to 200°C with fan and top heat.

    Wash, halve, clean and cube the bell peppers. Wash, clean and halve the tomatoes. Peel and halve the garlic. Peel, halve and slice the onions into strips. Spread everything on a greased baking tray, season with salt and pepper, drizzle with remaining oil and sprinkle powdered sugar. Roast in the oven for about 25 minutes until golden brown.

    Cook the pasta in salted water al dente.

    Rinse the herbs, shake dry, pluck leaves and set aside some for garnish. Roughly chop the rest.

    Remove the vegetables from the oven, drizzle with balsamic vinegar and season to taste. Drain the pasta and place it in a large bowl. Distribute the roasted vegetables over the pasta and serve garnished with fresh herbs.
