Ingredients
- 8 tomatoes
- 1 clove garlic
- 1 sprig rosemary
- 2 tbsp olive oil
- 100 ml vegetable stock
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 15 cocktail tomatoes
- 500 g spaghetti
- 4 tbsp parmesan

Blanch the tomatoes for a few seconds, shock in cold water, peel, quarter, seed and dice. Peel and finely chop the garlic. Wash the rosemary, shake dry and strip the leaves. Heat the oil in a pot, sauté the garlic and add the tomato cubes. Pour in the vegetable stock, add the rosemary and simmer for about 15 minutes.

Wash and halve the cocktail tomatoes. Season the sauce with salt, pepper and sugar, add the tomato halves and bring to a boil again. Cook the spaghetti in plenty of boiling salted water until al dente and mix into the sauce. Serve on warmed pasta plates sprinkled with parmesan.
