Pasta with Swiss Chard

Ingredients
- 400 g Swiss chard
- 4 tomatoes
- 1 onion
- 2 tbsp olive oil (20 ml)
- 500 g linguine
- Salt
- a splash lemon juice
- Cayenne pepper
- 4 tbsp grated Parmesan

Wash and trim the Swiss chard, remove tough stems and cut leaves into strips. Wash tomatoes, remove stem ends and chop into pieces. Peel and dice the onion. Heat a little oil in a hot pan and sauté the onion until translucent.

Add the Swiss chard and cook briefly. Add the tomatoes and simmer over medium heat for about 10 minutes until the sauce slightly thickens.

Cook the pasta in a large pot of boiling salted water according to package instructions, al dente.

Season the vegetables with lemon juice, salt and cayenne pepper. Drain the pasta and add it back to the pan if needed, stirring in some reserved pasta cooking water. Plate the pasta with Swiss chard and sprinkle with Parmesan.
