Ingredients
- 400 g tagliatelle
- Salt
- 50 g Bottarga (processed, dried roe of sea bass)
- 1 onion
- 1 tsp butter
- 0.1 g saffron (1 sachet)
- 125 ml white wine
- 200 ml whipping cream

Cook the pasta according to package instructions in plenty of salted water. Chop the Bottarga finely.

Peel the onion and dice it finely, sauté in butter, deglaze with wine and reduce by half. Add saffron and cream, season. Mix Bottarga into sauce, drain pasta, combine together, serve on warmed plates.
