Colorful Pasta Nests

Ingredients
- 600 g thin ribbon pasta
- 250 g mozzarella
- 4 EL butter (for the baking sheet)
- 2 small zucchini
- 2 EL olive oil
- 0.125 l vegetable broth (from the jar)
- 2 EL Sunflower seeds
- 1 red bell pepper
- 0.125 l vegetable broth (from the jar)
- 1 bunch Basil
- 0.125 l vegetable broth (from the jar)
- 1 beef tomato
- 0.125 l vegetable broth (from the jar)
- 4 thyme sprigs
- 1 Garlic clove
- 2 Spring Onions
- 1 EL Butter
- 200 g mushrooms
- 0.125 l vegetable broth (from the jar)
- 1 small can of crushed tomatoes
- 8 green olives, stuffed
- 0.125 l vegetable broth (from the jar)
Instructions

Cook pasta in plenty of salted water according to package instructions, drain and set aside. Grease baking sheet well with butter. Place pasta on the sheet, forming nests with a fork. Dice mozzarella finely.

For the zucchini sauce wash zucchini, trim ends, slice thinly, halve. Heat olive oil, sauté zucchini slices for 3 minutes, add vegetable broth, simmer for another minute until reduced. Distribute zucchini over pasta nests, sprinkle with some mozzarella and garnish with sunflower seeds.

For the bell pepper sauce cut pepper in half, remove seeds, wash and dice finely. Warm vegetable broth, drizzle over pasta nests, top with mozzarella and diced pepper.

For the tomato sauce wash beef tomato, pat dry, slice. Pour hot vegetable broth over pasta nests, place a slice of tomato on each nest. Peel garlic, press over. Remove thyme leaves and sprinkle over mozzarella.

For basil sauce finely chop basil leaves. Drizzle pasta nests with hot broth, mix basil with mozzarella, scatter over.

For mushroom sauce trim spring onions, wash, cut ends, slice into thin rings and sauté in butter. Clean mushrooms, slice finely, add to pan, pour broth, let everything reduce slightly. Spread over pasta nests, sprinkle with mozzarella.

For tomato-olive sauce drain tomatoes. Slice olives. Drizzle pasta nests with hot broth, top with tomatoes and olives, sprinkle with mozzarella.
