Pasta with Smoked Salmon and Arugula

Ingredients
- 400 g spaghetti
- Salt
- 80 g arugula (1 bundle)
- 2 Spring Onions
- 4 tbsp pitted black olives
- 30 g pine nuts (2 tbsp)
- 200 g smoked salmon (slices)
- 4 tbsp olive oil
- Pepper
Instructions

Cook the spaghetti according to the package instructions in boiling salted water until al dente.

Meanwhile, wash and dry the arugula, roughly chop it. Wash and trim the spring onions, cut into rings. Finely chop the olives.

Toast the pine nuts in a dry pan over medium heat until fragrant, then set aside. Cut the salmon into coarse strips.

Heat the olive oil in a large skillet. Sauté the spring onion rings over medium heat for 2–3 minutes.

Drain the pasta, reserving some cooking water. Combine the pasta with the arugula and spring onions, season with salt and pepper, and fold in the salmon.

Plate the spaghetti on four dishes and sprinkle with pine nuts and olives.
