Potato Gratin with Kohlrabi
The potato gratin with kohlrabi from Spoonsparrow brings many vital nutrients to the table and tastes great for the whole family.
Ingredients
- 800 g potatoes
- 2 kohlrabi (ca. 450 g)
- 1 bunch scallions
- 1 bunch parsley
- 250 ml milk
- 200 g Sour Cream
- Salt
- Pepper (freshly ground)
- 50 g grated Gruyère cheese

Wash, peel, and shave the potatoes into very thin slices.

Remove the green parts of the kohlrabi and set aside. Wash, trim, and peel the kohlrabi, halve it, and slice into thinner rounds. Wash the scallions, trim them, and cut into thin rings.

In a large shallow baking dish, layer the potato and kohlrabi slices alternately.

Wash the parsley, shake off excess water, and finely chop it together with the kohlrabi greens. Mix with the scallions, milk, and sour cream; season generously with salt and pepper. Pour over the gratin and sprinkle with Gruyère cheese.

Bake in a preheated oven at 200°C for 50–60 minutes until golden. If the cheese browns too quickly, cover the gratin with foil.
