Ingredients

  • 4 Garlic cloves
  • 1 small onion
  • 100 g green beans
  • Salt
  • 400 g spaghetti
  • 2 tbsp olive oil
  • 600 g mixed pre‑cooked seafood (fresh or frozen)
  • 125 ml Vegetable broth
  • 150 g crème fraîche
  • pepper (ground)
  • 2 tbsp lemon juice
  • 40 g grated Parmesan
  • basil (for garnish)

Instructions

  1. 1.

Peel and finely chop the garlic and onion. Wash, trim, and blanch the green beans in heavily salted boiling water for about 10 minutes until al dente; then drain, rinse with cold water, and set aside.

  2. 2.

Cook the spaghetti according to package instructions in plenty of salted water for about 8–10 minutes until al dente.

  3. 3.

Meanwhile, sauté the garlic and onion in hot oil. Add the seafood and cook for a few minutes, pour in the vegetable broth, bring to a boil, then stir in the crème fraîche.

  4. 4.

Reduce the heat and season the seafood with salt, pepper, and lemon juice. Mix in the green beans and warm through.

  5. 5.

Drain the spaghetti, let it sit briefly, then toss with the seafood sauce. Plate in warmed bowls, sprinkle with parmesan, and garnish with basil before serving.
