Ingredients
- 1 handful parsley
- 1 onion
- 1 Garlic clove
- 2 tbsp butter
- 1 tbsp flour
- 100 ml dry white wine
- 200 ml vegetable broth
- 400 g penne
- Salt
- 400 g smoked salmon (chunked)
- 100 ml whipping cream
- white pepper (ground)

Rinse the parsley, set aside a little for garnish, finely chop the rest. Peel and dice the onion and garlic. Sauté together in hot butter until translucent, then dust with flour. Add wine and broth, simmer gently for a few minutes.

Cook the pasta in boiling salted water al dente. Dice the salmon.

Blend the sauce with an immersion blender or strain through a sieve. Stir in cream and let it reduce to desired consistency or add more broth if needed. Season with salt and pepper to taste.

Plate the pasta with the sauce and salmon, garnish with parsley, and serve.
