Pasta with Pumpkin

Ingredients

  • 500 g penne
  • 500 g butternut squash (peeled and seeded)
  • 2 red onions
  • 4 tbsp olive oil
  • 2 Garlic cloves
  • 100 ml White wine
  • 1 bunch Basil
  • Sea salt
  • chili flakes
  • 50 g fresh goat cheese (grated)

Instructions

    Cook the penne in salted water according to package instructions until al dente. Drain and rinse with cold water.

    Dice the pumpkin into small cubes.

  3. 3.

    Peel the onions and slice them thinly into rings.

  4. 4.

    Peel the garlic and cut it into thin slices.

  5. 5.

    Sauté the onions and pumpkin slowly in hot oil until golden brown. Add the garlic, cook briefly, then deglaze with white wine. Simmer until the pumpkin is tender yet firm.

    Toss basil leaves into strips and stir into the penne along with a splash of reserved pasta water if needed. Season with sea salt and chili flakes. Plate onto warmed dishes and sprinkle with goat cheese before serving.
