Pasta with Poached Egg
Pasta with poached egg and caviar: Sometimes pasta needs caviar – for example in this delicious combination.
Ingredients
- 0.5 bunch Chives
- 20 g Parmesan cheese
- 250 g pappardelle pasta
- Salt
- 3 tbsp white wine vinegar
- 2 large eggs
- 2 tbsp olive oil
- Pepper
- 2 tbsp caviar (to taste)
Instructions

Wash the chives, shake dry and cut into very fine ribbons. Grate the cheese.

Cook the pasta in boiling salted water according to package instructions.

Bring about 1 l of water with vinegar to a boil. Crack the eggs and place each in a small bowl.

Three minutes before the end of the pasta cooking time add the eggs to the boiling vinegar water. Remove the pot from heat, let the pasta and eggs poach together.

Drain the pasta in a colander, return it to the pot and mix with olive oil, cheese, chives, salt and pepper. Transfer to preheated plates.

Lift the eggs from the water, let them drain briefly and place on top of the pasta. Garnish each with 1 tbsp caviar and serve.
