Pasta with Pesto

Ingredients

  • 40 g shelled almonds
  • 500 g spaghetti
  • Salt
  • 2 Garlic cloves
  • 1 handful basil
  • 1 handful mint
  • 5 tbsp olive oil
  • 2 tbsp freshly grated Pecorino
  • a splash lemon juice
  • Black pepper (from the grinder)

Instructions

    Roast the almonds briefly in a hot pan, then let them cool.

    Cook the pasta in salted water until al dente.

    Peel the garlic. Rinse and dry the basil and mint, shake off excess moisture, pick out the leaves and blend with the garlic, almonds, oil, pecorino, and a splash of pasta cooking water into a creamy pesto. Season with lemon juice, salt, and pepper.

    Drain the pasta well and mix in the pesto. Plate and serve.
