Ingredients
- 200 g peas (frozen)
- 400 g linguine
- Salt
- 500 g salsiccia
- 1 tsp freshly chopped mint
- 1 tsp freshly chopped oregano
- 2 tbsp olive oil
- 4 tbsp crème fraîche
- 100 ml heavy cream
- Salt
- Pepper (freshly ground)
- 3 tbsp freshly grated Parmesan
- mint (for garnish)

Let the peas thaw. Cook the pasta in boiling salted water until al dente.

Press the salsiccia through a cheesecloth, mix with herbs, form into small balls and brown them in a hot pan with oil all around. Add the peas, crème fraîche, and cream; season with salt and pepper and simmer for 2-3 minutes.

Drain the pasta, reserve 2-3 tbsp of cooking water, then add it to the pan with Parmesan and pasta. Toss well, adjust seasoning, and serve in bowls garnished with mint.
