Oven-Baked Trout with Herb Pesto

Ingredients
- 4 pre-cooked trout fillets
- 1 bunch parsley
- 1 bunch dill
- 1 onion
- 2 Garlic cloves
- 40 g pine nuts
- 6 tbsp Olive oil
- a splash lemon juice
- Salt
- freshly ground pepper
- 2 tbsp butter
- lemon wedges for serving
Instructions

Rinse the trout and pat them dry.

Rinse the herbs (reserve a few parsley leaves for garnish), shake off excess water, and chop.

Peel and dice the onion and garlic.

Coarsely chop the pine nuts.

Blend everything with olive oil. Season with lemon juice, salt, and pepper.

Spread some pesto inside each trout fillet. Melt the butter.

Place the trout on a baking sheet lined with parchment paper. Brush with melted butter and bake in the oven at 180°C (gas: level 2-3, fan: 160°C) for about 20 minutes.

Distribute the remaining pesto on plates and place the trout on top. Garnish with lemon wedges and parsley before serving.
