Ingredients

  • 120 g pancetta (slices)
  • 200 g mushrooms
  • 1 onion
  • 1 tbsp butter
  • 250 ml heavy cream
  • Salt
  • 500 g pasta (e.g., casarecce)
  • pepper (ground)
  • 60 g grated Parmesan
  • ½ handful parsley

Instructions

    Dice the pancetta into small cubes. Render it crisp in a pan, then remove. Clean and thinly slice the mushrooms. Peel and finely chop the onion. Sauté in butter until translucent, pour in cream, and simmer gently for about 10 minutes.

    Cook the pasta in a pot of boiling salted water until al dente.

    Add the mushrooms to the sauce and simmer for about 3 minutes until tender. Return the pancetta, season with salt and pepper. Drain the pasta, toss it with the sauce, fold in parmesan, and adjust seasoning. Finely chop parsley after rinsing, drying, and shaking.

    Distribute the pasta onto preheated plates and serve sprinkled with parsley.
