Pasta with Olives and Sardines

- 500 g spaghetti
- Salt
- 16 fresh sardines
- 400 g Tomatoes
- 3 shallots
- 6 Garlic cloves
- pepper (ground)
- flour (for dusting)
- 1 tbsp butter
- 50 ml olive oil
- 100 g black olives
- smooth parsley (for garnish)
Instructions

Cook the spaghetti according to package instructions in plenty of boiling salted water. In the meantime, rinse the sardines and pat them dry with paper towels.

Wash the tomatoes, cut off the stems, and dice the flesh. Peel the shallots and garlic and mince into small cubes.

Season the sardines with salt and pepper, then dust them lightly with flour. Heat butter in a pan and brown the sardines on all sides for 5–6 minutes until crisp.

Drain the pasta in a colander. In a large non-stick skillet, heat olive oil, add shallots, garlic, tomatoes, and black olives; sauté for about 5 minutes while stirring. Combine the drained pasta with the skillet contents, seasoning with salt and pepper to taste.

Plate the spaghetti, distribute sardines on top, and garnish with smooth parsley. Serve hot.
