Pasta with minced meat herb sauce brings spring to the table in no time.

Ingredients

  • 1 onion
  • 1 Garlic clove
  • olive oil
  • 500 g mixed minced meat
  • 2 tbsp Tomato paste
  • 100 ml dry red wine
  • 200 ml beef broth
  • Salt
  • Pepper (freshly ground)
  • 400 g rigatoni
  • 2 tbsp freshly chopped herbs (e.g., basil, parsley, chervil)

    Peel and finely chop the onion and garlic. Sauté in a hot pan with 2 tbsp oil until translucent. Add the minced meat and cook, breaking it up occasionally, until crumbly. Stir in the tomato paste, deglaze with wine and broth, season with salt and pepper, and simmer over medium heat for about 45 minutes.

    Cook the pasta in boiling salted water until al dente. Drain, let it rest briefly, then toss with the herb mixture and the meat sauce. Season to taste with salt and pepper and serve immediately.
