Ingredients
- 150 g brown or black lentils
- 300 g band pasta
- 1 red bell pepper (finely diced)
- 1 carrot (peeled and finely diced)
- 1 stalk celery (finely diced)
- 125 ml dry white wine
- 1 onion (finely chopped)
- 1 red peppercorn (finely chopped)
- 2 Garlic cloves
- 4 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt
- ground pepper
- 2 tbsp crème fraîche
Instructions

Soak the lentils in water overnight, covering them.

Sauté onion, peppercorn and pressed garlic in hot oil; add lentils with soaking water and wine, simmer for about 30-40 minutes. Ten minutes before cooking ends, stir in remaining vegetables and continue cooking; season with salt, pepper, and balsamic vinegar, then fold in crème fraîche.

Cook pasta al dente according to package instructions, mix with lentils, and serve.
