Ingredients

  • 400 g rigatoni
  • Salad
  • 250 g cooked ham
  • 3 spring onions
  • 70 g sun-dried tomatoes (in oil)
  • 1 Garlic clove
  • 30 g toasted pine nuts
  • 120 ml olive oil
  • 30 g freshly grated Parmesan
  • pepper (ground)
  • 75 ml heavy cream
  • 1 tsp fresh chopped oregano
  • Freshly grated Parmesan for sprinkling

Instructions

    Cook the pasta in boiling salted water until al dente. Cut the ham into 1 cm cubes. Wash, dry and trim the spring onions; slice into thin rings and blanch briefly in boiling water. Drain, rinse with cold water and let drain well.

    Drain the sun-dried tomatoes, reserving the oil. Blend the tomatoes with peeled garlic, pine nuts and olive oil in a blender until smooth. Stir in Parmesan and season with salt and pepper.

    Heat 1 tbsp tomato oil in a pan and brown the ham. Drain the pasta, add it to the pan and stir in 3-4 tbsp tomato pesto. Mix in cream, combine well, then season with salt, pepper and oregano. Plate and sprinkle with spring onions and Parmesan before serving.
