Pasta with Dried Tomatoes, Olives, Artichokes and Capers

Ingredients
- 8 young artichokes
- 180 g dried tomatoes (pickled in oil)
- 2 Garlic cloves
- 400 g spaghetti
- Salt
- 150 ml dry white wine
- 150 g green olives (pitted)
- 3 tbsp capers (jarred)
- 2 tbsp freshly chopped parsley
- pepper (ground)
- 40 g grated Parmesan

Wash the artichokes, remove the outer hard leaves, leave the stems mostly intact and clean them. Then cut lengthwise into quarters. Drain the tomatoes, reserving 2-3 tbsp of oil, then cut into pieces or strips. Peel and finely chop the garlic.

Cook the pasta in salted water until al dente.

Sauté the artichokes gently in the tomato oil for about 5 minutes while stirring. Add the garlic and deglaze with wine. Let simmer with the tomatoes for another 1-2 minutes. Fold in olives, capers, parsley and drained pasta. Season with salt and pepper and serve on plates sprinkled with Parmesan.
