Pasta with Creamy Spinach Sauce

Ingredients
- 350 g Tagliatelle
- Salad salt
- 300 g fresh spinach
- 0.5 lemon
- 30 g Parmesan cheese
- 1 Garlic clove
- 100 g Mascarpone
- 100 g crème fraîche
- 1 tsp instant vegetable broth
- Pepper
- nutmeg
Instructions

Cook the pasta according to package instructions in boiling salted water until al dente.

Meanwhile, wash and rinse the spinach, removing any tough stems if necessary.

Squeeze half a lemon. Grate the Parmesan. Peel and finely chop the garlic.

Heat 125 ml of water in a saucepan. Stir in Mascarpone and crème fraîche, then add the spinach and garlic; bring to a quick simmer once. Season with 1 tbsp lemon juice, instant vegetable broth, pepper, and a pinch of freshly grated nutmeg.

Drain the pasta, toss it with the sauce, fold in the Parmesan, and divide among four plates.
