Ingredients

  • 600 g Chicken breast fillet
  • Salt
  • Pepper (freshly ground)
  • 4 tbsp olive oil
  • 1 tbsp butter
  • 200 g Sugar snap peas
  • 400 g cherry tomatoes
  • 400 g tagliatelle

Instructions

    Season the chicken with salt and pepper, then sear each side in 2 tbsp olive oil and butter for about 5 minutes. Set aside to rest.

    Wash and trim the sugar snap peas, blanch them in boiling salted water for 3 minutes, drain and set aside. Wash and halve the cherry tomatoes; sauté both in remaining olive oil for 2-3 minutes.

    Cook the tagliatelle in plenty of boiling salted water until al dente, reserve about a cup of pasta cooking water, then drain. Toss the pasta with the vegetables, adding more reserved water if needed. Cut the rested chicken into bite-sized pieces, combine, and serve.
