Pasta with Cauliflower Sauce

The cauliflower pasta from Spoonsparrow is quick to prepare and always a good idea for the evening!

Ingredients

  • 400 g cauliflower (0.5 cauliflower)
  • Salt
  • 400 g Whole Wheat Spaghetti
  • 2 limes
  • 1 clove garlic
  • Pepper
  • nutmeg
  • 0.5 bunch Parsley

Instructions

    Clean the cauliflower, wash it and divide it into small florets. Place in a pot, add 1 cup of water, salt and bring to a boil with the lid closed. Cook for about 10 minutes on low heat.

    Meanwhile, cook the whole wheat spaghetti in boiling salted water according to package instructions. Peel and roughly chop the garlic, squeeze the juice of the limes.

    Remove the cauliflower pot from the heat and puree it with the cooking water. Add garlic and lime juice and season with salt, pepper and nutmeg. Puree everything finely and add a little more liquid if needed.

    Drain the spaghetti and add it to the cauliflower sauce in the pot. Wash, dry and roughly chop the parsley. Stir into the cauliflower pasta and serve immediately.
