Ingredients
- 400 g spaghetti
- Salt
- 3 Garlic cloves
- 0.5 bunch Chives
- 2 tbsp olive oil
- 350 ml heavy cream (at least 30% fat)
- pepper (ground)
- nutmeg
- 50 g grated Parmesan cheese
- 300 g smoked eel
- chive stems for garnish
Instructions

Cook the spaghetti in boiling salted water until al dente. Peel and finely chop the garlic. Wash, dry, and cut the chives into fine ribbons.

Heat the oil in a pan and sauté the garlic 1-2 minutes until translucent. Add the chives and deglaze with cream. Season with salt, pepper, and nutmeg; taste and adjust. Simmer for about 5 minutes, then add the drained pasta and parmesan cheese, tossing briefly.
